Breakfasts

I actually eat two breakfasts (like a hobbit I believe in second breakfasts :))
I start with all bran cereal with semi-skimmed milk, then eat the bacon & eggs later.
You can probably use full cream milk, it may even have fewer sugars than semi-skimmed. I just find it a bit too rich.

I adore bacon & eggs, but there is nothing to stop you eating last night’s leftover moussaka for breakfast.

In general a big breakfast with lots of protein is the way to go.

Bacon, perfect scrambled eggs, mushrooms, tomatoes & basil

Melt a small amount of butter in a non-stick saucepan.
Beat 3 eggs & cook in the butter on a low heat, stirring frequently.
When just cooked (i.e. the moment they stop being runny) turn off heat but leave pan on stove so they can finish cooking.
Microwave 2 rashers bacon for 1 minute. Then add button mushrooms, halved & cherry tomatoes, halved & microwave for a further 2 minutes.
Serve with the scrambled eggs & ripped fresh basil leaves.
