Cheeseburgers with salad

Recipe for homemade beefburgers
Ingredients
500g good quality beef mince (Aberdeen Angus is ideal)
¼ bottle red wine
½ tsp crushed dried chillis (or more if you like it hotter). These can be bought in the herbs & spices section of any supermarket
½ tsp oregano or mixed Mediterranean herbs
3 tsp Dijon mustard
4 slices cheddar or edam cheese
Salad
Small iceberg lettuce, chopped
10 small very sweet tomatoes, halved
½ block feta cheese, cubed
2 tbsps balsamic salad dressing

Chop the mince in a large dish with a fork until very fine.
Mix in the red wine, chilli & herbs with the fork.
Spoon over the mustard. Then using your hands, mix the mustard in, forming 4 burgers. Squeeze excess liquid from each one & shape firmly.
Put in fridge for 1 hour.
Fry in a little olive oil, or grill, ideally on a two sided grill/sandwich toaster. If frying, allow 1 side to cook completely before turning, so the burger does not fall apart.
When cooked top each burger with cheese & cook for 5 minutes.
Put 2 tsps balsamic salad dressing in a wooden salad bowl
Add lettuce, tomatoes & toss. Place feta cheese cubes on top.

Serve the burgers with the salad & a glass of red wine.
