Recipe for chicken with olives
Ingredients
2 chicken breasts
2 slices bacon
2 tbsps olive oil
100g black olives, pitted
100g green beans, fresh or frozen
6 whole cherry tomatoes
100g broccoli
500ml white wine
Juice 1 lemon
1 tsp oregano
1 tsp basil
6 tbsp mascarpone cheese
Fry chicken breasts in olive oil for 2 minutes, then wrap a slice of bacon around each
Place in casserole dish with olives, green beans, tomatoes, broccoli, white wine, lemon juice, oregano & basil
Cook in preheated oven at 180oC for 45 minutes, then remove lid or foil & cook for a further 30 minutes.
Stir in mascarpone cheese & cook for a further 10 minutes.
Serve with baked courgettes and beef tomatoes, with a chilled glass of rose or white wine
