Recipe for chilli
Ingredients
500g good quality beef mince (Aberdeen Angus is ideal)
1 large white onion, peeled & chopped fine
1 green pepper, chopped
1 yellow or orange pepper, chopped
1 tin chopped tomatoes
¾ tin kidney beans, rinsed to remove sugar & salt
200g button mushrooms, halved
3 tablespoons tomato puree
¼ bottle red wine
Beef stock made from 1 Oxo cube in 300ml boiling water
2 tsps mild chilli powder
½ tsp crushed dried chillis (or more if you like it hotter). These can be bought in the herbs & spices section of any supermarket

Fry the beef on a medium high heat in a non stick pan, mix until in very small pieces & add the chopped onion. Fry for 5 minutes.
Add the beef stock & turn the heat down to medium low.
Add the peppers, mushrooms, chilli, tomato puree, red wine, kidney beans & chopped tomatoes.
Simmer for 1 ½ hours, stirring occasionally.
Serve with a glass of red wine. The chilli is delicious eaten without any other accompaniment
