Mexican stir fried chicken with sour cream and chilli

Basically chicken enchiladas without the floury part. Delicious and spicy.

Recipe for Mexican stir fried chicken with sour cream & chilli

Ingredients
2 chicken breasts, sliced
4 cherry tomatoes, halved
1 green pepper, sliced
1 yellow pepper, sliced
1 red pepper, sliced
½ white onion, chopped
3tbsps olive oil
½ tsp dried flaked chilli
Small pot sour cream
1 tin refried beans
Small pot guacamole
100g cheddar cheese, grated

Fry the chicken breasts, onion, peppers, tomatoes & chilli flakes in the olive oil in a frying pan on a low heat with a lid for about 20 minutes, until chicken is well cooked
Heat refried beans in a saucepan or in the microwave
Serve chicken & beans with sour cream & guacamole, with grated cheese on top
Serve with Mexican beer, or tequila or water with lots of ice & lemon
